Beat the eggs, salt and cinnamon in a bowl.
Mix the sweet potato puree, 1 cup of bread crumbs, cheese and baking powder. Form balls, immerse them in the egg mixture and then pass them on the remaining breadcrumbs until they are evenly covered.
Heat the oil in a large pot over medium-high heat. Carefully add the balls and cook for 3 min. or until they are well browned. Drain them on paper towel. Serve them hot.
