Tapenade is a spreadable paste made from black olives, capers, and anchovies. It comes from the Provence region of France and is also known as olivada. It is served as a snack, spread over bread.
Rinse the olives in cold water. Place all the ingredients in a food processor. Blend well, and with a spatula, scrape down what has stuck to the sides of the processor. The mixture should have a paste-like consistency after grinding for 1-2 minutes.
Transfer it to a serving platter and serve with slices of bread.
