Tomato and basil bruschetta

Italian appetizer of little bread rolls with prepared tomatoes drizzled with olive oil. Also delicious if topped with a bit of serrano ham.

  • 8 tomatoes, ripe, diced, and seedless
  • 2 tablespoons garlic
  • 1/2 cups basil
  • 1/4 cups parsley, chopped
  • 1 tablespoon lime juice
  • 1/2 tablespoons olive oil
  • 1 teaspoon tarragon, finely chopped
  • 1/4 tablespoons dried chile, chili pepper
  • 2 baguettes, cut into 1 cm pieces
  • 6 garlics, cut in half

  • In a bowl, mix all the ingredients except the bread and garlic.
  • Add salt and pepper to taste.
  • Refrigerate for 3 hours.
  • Preheat the oven to 350 degrees Fahrenheit and toast the sliced bread on a baking sheet.
  • Spread with garlic and serve with the tomato mixture on top.
