4 cups onion, thinly sliced (equivalent to 2 large onions)
cloves garlic, finely chopped
3 tablespoons white wine
2 teaspoons fresh thyme
4 tablespoons Parmesan cheese, grated
115 grams goat cheese
1 tomato, cut into 4 slices
1 tablespoon basil, cut into strips

Preheat the oven to 220 degrees (425 F).
With a rolling pin, roll out the puff pastry until it has an even layer. Using a large cookie cutter, make 4 circles and cut out the puff pastry. Place the puff pastry circles on a baking sheet.
Caramelize the onion in a saucepan. Add 3 tablespoons of olive oil and add the sliced onion. Let it release its liquid over low heat, stirring occasionally. Let it caramelize for 15-20 minutes.
Add 1/2 teaspoon of salt and 1/4 teaspoon of pepper, the wine, garlic, and thyme. Continue cooking for another 10 minutes or until the onion is slightly brown. Remove from heat.
With a smaller cookie cutter or a knife, form another circular edge inside the puff pastry circles. Use a fork to pierce the puff pastry in the center and sprinkle 1 tablespoon of parmesan cheese on top of each.
Place 1/4 of the onion mixture on top of each circle, add a bit of goat cheese, and place a slice of tomato on top. Brush the tomato with olive oil and sprinkle with salt, basil in strips, and pepper. Sprinkle with a bit more parmesan cheese.
Bake in the oven for 20-25 minutes until the puff pastry is golden brown. Serve hot.
