Tostitos with Esquites

  • 2 tablespoons vegetable oil, for the esquisites
  • 1/4 cups red onion, finely chopped for the esquisites
  • 1 clove garlic, finely chopped for the esquisites
  • 2 árbol chiles, clean and cut into rings, for the esquisites
  • 1 cup corn kernels, for the esquisites
  • 1/4 cups epazote, finely chopped for the esquisites
  • 4 cups water, for the esquisites

  • 1 cup mayonnaise, for the dressing
  • 2 tablespoons chipotle chile, ground for the dressing
  • 2 tablespoons fresh cilantro, finely chopped, for the dressing
  • 1 bag Tostitos® green salsa tortilla chips, (62 grams)
  • 1 cup chorizo, golden brown, to accompany
  • piquín chile, to accompany
  • lime, to accompany

  • In a pan with oil, sauté the onion, garlic, and árbol chili. Then add the corn kernels, epazote, salt, pepper, and water, and let cook for 30 minutes or until the kernels are soft enough. Set aside.
  • In a bowl, mix the mayonnaise, chipotle pepper, and cilantro. Set aside.
  • Using scissors, cut the bag of Tostitos® Salsa Verde horizontally. Add the esquisites, mayonnaise, fresh cheese, chorizo, and piquín chili.
  • Serve with lime on the side.
