In a pan with oil, sauté the onion, garlic, and árbol chili. Then add the corn kernels, epazote, salt, pepper, and water, and let cook for 30 minutes or until the kernels are soft enough. Set aside. In a bowl, mix the mayonnaise, chipotle pepper, and cilantro. Set aside.
