12 sheets rice paper
500 milliliters water, warm
1 cucumber, in strips
1 carrot, in strips
1/4 cabbages, grated
1 red bell pepper, julienned
1 bunch fresh cilantro
3 tablespoons peanut butter
1/4 cups soy sauce
1 tablespoon hot chili sauce
1 lime

Soak the rice paper sheets in warm water for ½ minute or until softened and become flexible.
Spread the hydrated and drained rice paper sheets on the table.
Place the vegetables on the rice paper and cilantro leaves.
Roll them up making sure one end of the vegetables is sticking out of the rice paper sheet.
Press lightly to seal the rolls with the moisture from the filling.
To prepare the sauce, in a bowl combine peanut butter, soy sauce, chili sauce, and lime juice. Mix until well combined.
Serve with a bit of peanut butter.
