Vegetable Rolls

Fun vegetable rolls, super fun for kids, prepare these tasty vegetable rolls for their back-to-school.

  • 12 sheets rice paper
  • 500 milliliters water, warm
  • 1 cucumber, in strips
  • 1 carrot, in strips
  • 1/4 cabbages, grated
  • 1 red bell pepper, julienned
  • 1 bunch fresh cilantro
  • 3 tablespoons peanut butter
  • 1/4 cups soy sauce
  • 1 tablespoon hot chili sauce
  • 1 lime

  • Soak the rice paper sheets in warm water for ½ minute or until softened and become flexible.
  • Spread the hydrated and drained rice paper sheets on the table.
  • Place the vegetables on the rice paper and cilantro leaves.
  • Roll them up making sure one end of the vegetables is sticking out of the rice paper sheet.
  • Press lightly to seal the rolls with the moisture from the filling.
  • To prepare the sauce, in a bowl combine peanut butter, soy sauce, chili sauce, and lime juice. Mix until well combined.
  • Serve with a bit of peanut butter.
