Vegetarian Quinoa Meatballs

1 cup quinoa, cooked
1/2 onions
1/2 red bell peppers
1 bunch parsley, washed and disinfected
2 cloves garlic
1 tablespoon soy sauce
1 cup bread crumbs
Oléico® safflower oil
1 cup flour, to coat the meatballs

Sauté the finely chopped onion, parsley, red pepper, and garlic with oil in a pan.
Add the quinoa, mix well, and sauté. Add soy sauce to taste and stir well to integrate with the quinoa. About 3 minutes.
Transfer the mixture to a blender and blend, adding breadcrumbs to thicken it a bit.
Let the mixture cool.
Once cooled, shape the meatballs, then coat them in flour.
Fry in Oléico® Oil until crispy. Remove from the oil and place on paper towels to absorb excess grease.
