Start by preparing the filling. Heat a tablespoon of vegetable oil in a medium-sized skillet.
Add half of the onion and garlic and sauté for 2-3 minutes. Add the huitlacoche and cook for 5 minutes or until well cooked. Season with salt and pepper and pour into a deep plate.
Repeat the same process to make the zucchini flower filling.
With a tortilla press, make tortillas with the tortilla dough.
Fill the tortillas with a bit of Oaxaca cheese and the huitlacoche filling or the zucchini flower filling. Seal the quesadilla well with your fingers.
Cook the quesadillas either on a griddle (if you want them without fat) or in oil if you prefer them fried.
