  • 3 tomatoes, roasted
  • 1/4 onions, roasted
  • 1 clove garlic, roasted
  • 2 guajillo chiles, cleaned and hydrated
  • 1/4 cups water
  • vegetable oil
  • 2 tablespoons onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1/4 cups carrot, in medium cubes
  • 1/4 cups celery, in medium cubes
  • 1/2 cups potato, in medium cubes
  • 1/2 cups pumpkin, in medium cubes
  • 2 liters water
  • 500 grams white fish, in cubes
  • salt and pepper
  • lime juice, to accompany
  • bolillo roll, to accompany

  • Blend the tomato, onion, garlic, guajillo chili, and water until all ingredients are well integrated and blended. Set aside.
  • Sauté the onion and garlic in a pot with a little oil for 2 minutes, then add the carrot, celery, and potato, and sauté for 3 minutes. Pour in the water and the strained marinade and cook for 15 minutes.
  • Add the zucchini, fish, salt, pepper, and oregano, and cook for 10 more minutes or until all the ingredients are well cooked.
  • Serve the easy fish broth in a bowl and accompany with lime juice and bolillo.
