  • Sauté the onion and garlic for 3 minutes. Add the ricotta, cream, salt, and pepper. Mix until incorporated, add the epazote, and cook for 2 more minutes. Let cool.
  • Take a portion of the dough, hollow it out and fill it with the ricotta. Shape the gorditas.
  • Cook the gorditas on a griddle with a little oil for 3 minutes on each side.
  • Serve and accompany with onion, cilantro, and red sauce.
