12 button mushrooms

1/2 onions

1/4 cups Oaxaca cheese
salt , to taste

Season the fillets with salt and pepper. Set aside. Sauté julienned onion, mushrooms, and tomato slices in olive oil, seasoning with salt and pepper.
Wrap the fish fillets with the mixture and add strips of Oaxaca cheese, drizzling with drops of olive oil.
Cook them in a water bath or in the oven (170ºC) for 20 to 25 minutes.
