Autumn Fillet

Fish wrapped with tomato and mushrooms. Oaxaca or Manchego cheese.

  • 6 white fish fillets
  • 12 button mushrooms
  • 1 tomato , large
  • 1/2 onions
  • olive oil
  • 1/4 cups Oaxaca cheese
  • salt , to taste
  • pepper, to taste

  • Season the fillets with salt and pepper. Set aside. Sauté julienned onion, mushrooms, and tomato slices in olive oil, seasoning with salt and pepper.
  • Wrap the fish fillets with the mixture and add strips of Oaxaca cheese, drizzling with drops of olive oil.
  • Cook them in a water bath or in the oven (170ºC) for 20 to 25 minutes.
