1 plantain
600 grams smoked tuna
2 tablespoons peppermint, chopped
salt, and ground pepper (to taste)
1 cup panko, or breadcrumbs
vegetable oil, (as needed)
1 red bell pepper, diced
3 tablespoons fresh cilantro, chopped
1 tablespoon peppermint, chopped
3 sprigs watercress, chopped
2 tablespoons fresh chives, chopped
1 tablespoon extra virgin olive oil

Cook the banana in a pot of water until soft.
In a bowl, mash the banana with a fork and mix it with the tuna, cilantro, egg, mint, salt, and pepper.
Form patties and bread them with panko, then fry in a pan with hot oil.
To accompany, mix the bell pepper with the herbs, oil, and pepper.
