Battered Shrimp Tacos

  • 3 San Juan® eggs
  • vegetable oil
  • flour
  • salt and pepper
  • 12 flour tortillas
  • lettuce
  • 2 tomatoes
  • 1 avocado
  • 1 red onion
  • lime, for serving
  • sour cream, for serving
  • green salsa, raw

  • Season the shrimp with salt and pepper and coat them in flour. Set aside.
  • Separate the egg whites and whip them to a meringue point. Mix with the yolk and batter the shrimp.
  • Fry until golden brown. Drain and set aside.
  • Heat the flour tortillas and place the shrimp.
