Black Aguachile

This aguachile is characterized by being marinated with charred chiles and Huichol® Black Sauce, which gives it its distinctive color. For this version, we prepared it with fish and it is accompanied by avocado, onion, and other vegetables.

  • 15 Habanero chiles
  • 1/2 cups orange juice, natural
  • 1/2 cups lime juice, natural
  • 1 pinch salt
  • 1/2 cups Salsa Huichol® black sauce
  • 400 grams sea bass, cut into large cubes
  • 1 cup red onion
  • 1/2 cups cucumber, sliced into half moons
  • 1 avocado, in slabs
  • 1/2 cups cilantro, finely chopped
  • 1 radish, in slices
  • sprouts, alfalfa sprouts, for garnish

  • Roast the habanero peppers until completely charred and turn black.
  • Blend the chiles with orange juice, lime juice, and salt, strain, and add the Huichol® Black Sauce.
  • Marinate the fish in the black sauce for 5 minutes.
  • Serve the aguachile with red onion, cucumber, avocado, chopped cilantro; garnish with radish and alfalfa sprouts.
