  • 1/4 cups Extra Special Olive Oil®
  • 3 tablespoons garlic, finely chopped
  • 1 onion, finely chopped
  • 1 cup leek, finely chopped
  • 2 cups tomato, without shell, without seeds, finely chopped
  • 1 sprig thyme
  • 3 leaves bay
  • 1 sprig parsley
  • 1/2 teaspoons saffron
  • 3 liters fish broth
  • 2 cups mussels
  • 1 cup clams
  • 1 cup large shrimp, cleansed
  • 6 crabs
  • 2 cups fish, in large pieces
  • 1 cup squid, clean and in hoops
  • 1 tablespoon Extra Special® organic sea salt
  • 125 grams Extra Special® toast crostini pesto

  • Heat the olive oil in a saucepan over medium heat and add the garlic, onion, pore and tomato. Cook a few minutes and add the thyme, the bay leaves, the parsley and the saffron.
  • Add the fish broth, the mussels, the clams, the shrimp and the crab. Cook around 20 minutes.
  • Add the fish, squid and cook 10 minutes more. Let it boil and season.
  • Serve and accompany with croutons.
