Bouillabaisse soup is an easy-to-make recipe, a typical and very flavorful French dish made with various seafood and fish, tomatoes, aromatic herbs, onions, and a delicate touch of saffron, served with long bread croutons. Delicious.
2 cups tomato, without skin, without seeds, finely chopped
1 sprig thyme
3 leaves bay
1 sprig parsley
1/2 teaspoons saffron
3 liters fish broth
2 cups mussels
1 cup clams
1 cup large shrimp, clean
6 crabs
2 cups fish, in large pieces
1 cup squid, cleaned and in rings
1 tablespoon Extra Special® organic sea salt
125 grams Extra Special® toast crostini pesto

Heat olive oil in a pot over medium heat and add garlic, onion, leek, and tomato. Cook for a few minutes and add thyme, bay leaves, parsley, and saffron.
Add fish stock, mussels, clams, shrimp, and crab. Cook for about 20 minutes.
Add the fish, squid, and cook for 10 more minutes. Let it come to a boil and season.
Serve and accompany with croutons.
