1 cup almonds, toasted and filleted
2 tablespoons parsley, finely chopped
1 teaspoon garlic, finely chopped
2 eggs
1 tablespoon onion powder
salt and pepper
4 grouper fillets
cooking spray
soybean sprouts, for accompaniment

Preheat the oven to 180°C.
Mix the breadcrumbs with the almonds, parsley, and garlic. Set aside.
Beat the eggs with onion powder and season with salt and pepper.
Dip the grouper fillets in the egg and coat with the almond mixture.
Place the fillets on a baking sheet, spray both sides with cooking spray, and bake for 20 minutes or until cooked through.
Serve accompanied by a soybean sprout salad.
