Breaded Fish with Almonds

  • 1/2 cups amaranth, ground in the blender
  • 1 cup almonds, toasted and filleted
  • 2 tablespoons parsley, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 2 eggs
  • 1 tablespoon onion powder
  • salt and pepper
  • 4 grouper fillets
  • cooking spray
  • soybean sprouts, for accompaniment

  • Preheat the oven to 180°C.
  • Mix the breadcrumbs with the almonds, parsley, and garlic. Set aside.
  • Beat the eggs with onion powder and season with salt and pepper.
  • Dip the grouper fillets in the egg and coat with the almond mixture.
  • Place the fillets on a baking sheet, spray both sides with cooking spray, and bake for 20 minutes or until cooked through.
  • Serve accompanied by a soybean sprout salad.
