Ingredients

4 portions
  • 1/2 cups amaranth, ground in the blender
  • 1 cup almond, toasted and filleted
  • 2 tablespoons parsley, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 2 eggs
  • 1 tablespoon onion powder
  • to taste salt and pepper
  • 4 grouper fillets
  • enough spray oil
  • to taste soybean germ, To accompany

Preparation

Preheat the oven to 180 ° C.
Mix the breadcrumbs with the almonds, parsley and garlic. Reservation.
Beat the eggs with the onion powder and season with salt and pepper.
Dip the grouper fillets over the egg and coat with the almond mixture.
Place the steaks on a tray, spray with cooking spray on both sides and bake for 20 minutes or until done.
Serve with a soy germ salad.

For a cheaper option, you can substitute grouper fillets for mojarra fillets.
