Breaded Tuna Croquettes

Rich and super healthy tuna croquettes are super easy to make and the kids love them.

  • 1 chile
  • salt
  • 2 cups mashed potatoes
  • 1 cup canned tuna in water, well drained
  • 2 tablespoons parsley
  • 2 eggs
  • 4 cups breadcrumbs
  • 4 cups tomato purée
  • 200 grams vegetable salad

  • In a pan with olive oil, brown the onion with the chopped chile, season with salt
  • In a medium bowl, place the mashed potatoes, add the tuna, salt, chopped parsley, onion, 2 eggs, 1 drizzle of olive oil, season to taste and mix well.
  • To form the croquettes, passing them by egg and rebozándolas with ground bread
  • Brown the croquettes in a pan, turn and turn.
  • Put the pancakes on absorbent paper to drain well
  • Serve with a little salad
