California Sushi

The California sushi roll is filled with avocado, crab, cucumber, and topped with masago.

  • 4 cups sushi rice
  • 1 tablespoon lime juice
  • 4 leaves nori
  • 1 cucumber, peeled and deseeded cut into julienne
  • 1 avocado, in julienne (add lemon juice to prevent browning)
  • 4 sticks surimi, (imitation crab)
  • 1/4 cups masago, (swordfish roe)

  • Place a sheet of seaweed in front of you with the smooth and shiny side down. If the sheet is a rectangle, the long side should be facing you.
  • Wet your fingers with a little water, and place 1/2 cup of rice on the seaweed, covering the entire seaweed except for a 2 cm wide strip on the long side facing you.
  • Place the swordfish roe on the rice to look like in the photo.
  • Prepare a bamboo mat to make sushi with plastic wrap and place the seaweed sheet with the rice side down on it.
  • Now make a line in the center of the seaweed with the filling: crab, cucumber, and avocado.
  • Roll the sushi using the bamboo mat and pressing little by little to create a firm sushi roll. The rice should be on the outside of the sushi and the filling on the inside.
