Easy Shrimp Ceviche

This shrimp ceviche recipe is made to be enjoyed as a fresh and meatless meal, making it perfect for the Lent season. Ceviche, which can also be written as cebiche, sebiche, or seviche, is a dish that consists of marinating a meat, which can be fish or seafood, with citrus. Seasoned with Knorr® Shrimp Broth, it gives flavor to all your meals and this shrimp ceviche also has a very original presentation.

  • 1 watermelon, for filling
  • 4 cups pink shrimp
  • 1 cup red onion
  • 1 cup tomato
  • 1 cup jicama
  • 1 cup cucumber
  • 1 cup watermelon, diced
  • 1/2 cups lime juice
  • 2 tablespoons Habanero chile, roasted and finely chopped
  • 1 tablespoon Knorr ® shrimp bouillon
  • 3 tablespoons cilantro, finely chopped
  • tostadas, to accompany

  • On a cutting board, cut the watermelon in half and using a spoon, scoop out the flesh. Set aside.
  • On a board, chop the onion, tomato, jicama, and cucumber.
  • In a bowl, mix the shrimp with the red onion, tomato, jicama, cucumber, watermelon, lime juice, habanero chili, and add Knorr® Shrimp Broth until incorporated.
  • Serve in the watermelon and accompany with toast.
