Peruvian Style Ceviche

This classic ceviche from Peru is a lighter version, made with white fish marinated in lemon juice, accompanied by red onion, manzano chili or ají, corn, seasoned with cilantro and finely chopped garlic, and served with cooked sweet potato and French lettuce. This fresh preparation is ideal for sharing with whoever you prefer.

  • 1/2 red onions, sliced
  • 1/4 cups lime juice
  • 1 tablespoon salt
  • 2 cups sole, cut into cubes
  • 3 manzano chiles, or ají, finely chopped
  • 1/4 cups fresh cilantro, finely chopped
  • 1 pinch salt and pepper
  • 1 sweet potato, cooked and cut into thick slices
  • 1/2 cups corn kernels, (corn) cooked
  • butterhead lettuce, to accompany

  • In a bowl, add the onion with lemon juice and salt, add the fish, the chili, the garlic, the cilantro, add a little more salt, and season with pepper.
  • Let it rest in the refrigerator for 30 minutes.
  • Serve accompanied by lettuce, corn kernels, and sweet potato. Enjoy.
