Stuffed Chile with Ceviche

  • 6 güero chiles, roasted
  • 1 cup lime, to marinate the ceviche
  • 1 cup Herdez 8®, to marinate the ceviche
  • 1 tablespoon Worcestershire sauce, to marinate the ceviche
  • 1 serrano chile, seedless, to marinate the ceviche

  • 4 cups white fish, in small cubes
  • 1 cup red onion, in small cubes
  • 1/2 cups Jalapeño chile, in small cubes
  • 1 cup tomato, in small cubes
  • 1/2 cups cilantro, finely chopped
  • cilantro leaves, for decoration
  • fried onion, for decoration

  • For the sauce: blend the lime, Herdez 8®, Worcestershire sauce, serrano pepper, salt, and pepper. Set aside.
  • Place the fish in a bowl, pour in the marinade sauce, cover, and refrigerate for 1 hour.
  • Add onion, jalapeño pepper, tomato, and cilantro to the fish and mix very well.
  • Make a diagonal cut on the chiles, remove the seeds and veins, and fill with the white fish ceviche.
  • Serve the stuffed chile with ceviche on a flat plate and decorate with cilantro leaves and fried onions.
