Chipi-Chipi Rice

  • 2 cups rice
  • 3 pounds caribbean donax, without shell
  • 1 onion, big head
  • 2 tomatoes
  • 1 red bell pepper
  • 2 cloves garlic
  • achiote

  • Prepare the stew: remove the seeds from the bell peppers and chop them into very small pieces, as well as the onion and tomatoes, add garlic and butter to sauté until they turn golden, it can be colored with annatto.
  • Meanwhile, in a pot, boil the chipi chipi in water for 10 minutes. Strain with a fine cloth to remove any impurities and reserve the broth. (This will be used to prepare the rice)
  • When the stew is well cooked, add the chipi chipi, and mix until the flavors are integrated.
  • Add the reserved water, and after it boils, add the rice and salt, stir with a spoon until it dries, cover, and leave on low heat until ready to serve.
