Prepare this rich stew of Colombian cuisine where a stew is cooked with chipi chipi and rice. Perfect for lovers of seafood and food with a lot of flavor. Do not stop trying them.

Ingredients

6 servings
  • 4 cups of Water
  • 2 cups of rice
  • 3 pounds of chipi Chipi without shell
  • 1 piece of onion bighead
  • 2 pieces of tomato
  • 1 piece of Red bell pepper
  • 2 cloves of garlic
  • to taste of achiote
  • to taste of salt and pepper

    Preparation

    Prepare the stew: remove the seeds of the peppers and chop into very small pieces, like onions and tomatoes, add the garlic and butter to sauté until they take a golden color, you can color with achiote.
    Meanwhile, in a casserole boil the chipi chipi in the water for 10 minutes. Strain with a thin cloth to remove any impurities and reserve the broth. (With this the rice is prepared)
    When the stew is well cooked, add the chipi chipi, mix until the flavors are integrated.
    Add the reserved water and after boiling add the rice and salt, move with the rolling pin until it dries, cover and leave in little candle until the moment of serving.

    PRESENTATION

    Serve with green banana and avocado toast.

    TIPS

    Reserve chipi chipis with the stew and add them over the rice served.
