Clams a la Mexicana

Clams like you've never tasted before; delicious. They are cooked Mexican style with onion, tomato, parsley, cilantro, serrano chili, and a little olive oil, allowing the mixture of ingredients to give them a wonderful flavor. Share them at any meal with family.

  • 2 kilos clams, white and small
  • 1 onion, small chopped
  • 2 tomatillos, large
  • 2 tablespoons parsley
  • 3 serrano chiles
  • 1 tablespoon fresh cilantro, chopped
  • 4 tablespoons olive oil

  • Finely chop the onion, tomato, and chilies.
  • Wash the clams and their shells very well; place them in a deep saucepan.
  • Pour in two cups of cold water, add the chopped onion, tomato, and chili.
  • Add the cilantro, parsley, olive oil, and season with salt and pepper to taste.
  • Place the saucepan on the heat; cover and let it simmer gently until everything is tender and the sauce has reduced. Serve them hot and you're done.
