Clam Cream

Try this delicious clam cream, it's easy and tasty; it's ideal to start any meal, and a unique way to serve it would be inside a large bread.

  • 3 tablespoons butter
  • 1 1/2 onions, chopped
  • 700 grams potato, peeled and diced
  • 150 grams clams
  • 1/4 cups cow's milk
  • 1/2 cups bottled clam juice
  • 1 teaspoon dried thyme
  • salt
  • pepper
  • 3 tablespoons flour
  • 4 cups fish broth, hot
  • 1/4 cups sour cream

  • Melt the butter in a pot, sauté the finely chopped onion and garlic.
  • Add the flour, mix well, and continue mixing to cook the flour.
  • Pour in the fish stock and clam juice, and season to taste with salt, pepper, and thyme.
  • Add the potatoes and let them cook until tender (about 25 min).
  • Add the milk, cream, and clams.
  • Cook for 5 more minutes but do not let it boil.
  • Serve.
