Clams in Their Juice

  • 2 kilos clams, small and white
  • 1 onion, finely chopped
  • 4 tablespoons parsley
  • 4 tablespoons olive oil
  • pepper, to taste
  • garlic

  • Chop the onion and parsley.
  • Wash the clams and their shells very well; place them in a deep pot.
  • Pour in two cups of cold water, add the onion and garlic powder.
  • Add the parsley and olive oil, season with salt and pepper to taste.
  • Place the pot on the fire; cover and let it simmer on low heat until everything is tender and the sauce has reduced. Serve hot and enjoy.
