Cod Curry and Coconut Milk

2 tablespoons olive oil
1 onion, medium
2 bell pepper
1 tablespoon curry powder
25 milliliters coconut milk
750 grams cod, in fillet
10 milliliters water
salt and pepper

Cut the cod fillets into cubes.
Peel and chop the onion.
Wash and cut the peppers (into small pieces).
In a pan, heat the olive oil, add the onion and peppers, and let them cook for 5 minutes.
Add the curry and mix well, then let it cook for two more minutes.
Add the water and coconut milk, mix well. When it starts to boil, add the cod cubes, salt, and pepper.
Let it simmer for ten minutes, stirring gently from time to time.
Remove from heat and serve with white rice or your preferred side dish.
