Cod Curry and Coconut Milk

A recipe with exotic flavors that my family and I adore. The taste of coconut milk softens the flavor of the curry; it’s simply a perfect combination.

  • 2 tablespoons olive oil
  • 1 onion, medium
  • 2 bell pepper
  • 1 tablespoon curry powder
  • 25 milliliters coconut milk
  • 750 grams cod, in fillet
  • 10 milliliters water
  • salt and pepper

  • Cut the cod fillets into cubes.
  • Peel and chop the onion.
  • Wash and cut the peppers (into small pieces).
  • In a pan, heat the olive oil, add the onion and peppers, and let them cook for 5 minutes.
  • Add the curry and mix well, then let it cook for two more minutes.
  • Add the water and coconut milk, mix well. When it starts to boil, add the cod cubes, salt, and pepper.
  • Let it simmer for ten minutes, stirring gently from time to time.
  • Remove from heat and serve with white rice or your preferred side dish.
