Gratinated Stuffed Chile with Cod

  • 2 liters water
  • 1 kilo Langa® flaked cod
  • 4 Poblano chiles
  • 2 tablespoons olive oil
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 cup tomato, cut into small cubes
  • 1/4 cups corn kernels
  • 1/4 cups mayonnaise
  • 2 tablespoons parsley, finely chopped
  • 1 cup Manchego cheese, for gratin

  • 2 cups tomato sauce, for the sauce
  • 1 package cream cheese
  • parsley, for decoration

  • Desalt the Langa® cod flakes by covering them with enough water for 48 hours, changing the water constantly.
  • Preheat the oven to 180°C.
  • In a griddle, roast the poblano chiles, place them in a bag, and let them sweat for 20 minutes.
  • Heat the olive oil over medium heat, add the onion until sautéed, then add the garlic, tomato, corn kernels, the desalted Langa® cod, and cook for 15 minutes. Add the mayonnaise, season with salt, pepper, and parsley. Cool slightly.
  • Remove the skin and seeds from the chiles, and fill them with the cod.
  • Place in a baking dish and sprinkle with Manchego cheese, bake for 20 minutes.
  • For the sauce: in a small pot over medium heat, warm the tomato sauce, add the cream cheese, season with salt and pepper, and cook until thickened.
  • Serve a chile accompanied by the creamy tomato sauce, and decorate with Chinese parsley.
