Recipe for Spiritual Cod or Bacalhau Espiritual

  • 500 grams cod, salted without skin and bones
  • 1 onion
  • 2 cloves garlic
  • 4 carrots
  • 50 grams white bread
  • 50 milliliters cow's milk
  • 10 grams olive oil
  • 300 milliliters cow's milk, for the béchamel
  • 120 milliliters clotted cream, for the béchamel
  • 50 grams wheat flour, for the béchamel
  • 30 milliliters olive oil, for the béchamel
  • salt and pepper

  • Soak the cod the day before to ensure it is at the optimal level of salt for spiritual cod. In the first 6 hours, change the water 3 times every 2 hours, and then let it soak for another 12 hours.
  • Chop the garlic, onion, and carrot very finely in brunoise. Sauté the vegetables and add the drained cod. Incorporate the bread and then the milk. Let everything cook together until it reaches a thick consistency.
  • Fry the potatoes in well-heated olive oil.
  • For the béchamel: Sauté the flour with olive oil and gradually add the milk mixed with cream. Finally, season with nutmeg and pepper. Adjust the salt to taste.
  • For assembling the dish, you will need a baking tray. Place the cod mixture at the bottom, followed by the potatoes, and top with the béchamel. Bake in the oven for 15 minutes and our spiritual cod is ready.
