Crab broth with noodles

  • 90 grams Noodle
  • 1 tablespoon butter
  • 1 bunch chives
  • 5 cups vegetable broth
  • 125 grams crab, fresh or tin
  • 1 pinch cayenne pepper
  • 1 tablespoon tomato purée
  • 2 teaspoons lime juice

  • Cook in boiling water the noodles and reserve. Heat the butter in a saucepan and put the onion cut diagonally of 2 cm. with the finely chopped celery and cook 4 minutes.
  • Add the broth and boil for 5 minutes. Crumble the crab and put the broth together with the drained noodles. Season with salt and cayenne. Serve hot soup with lemon juice.
