Crab Croquettes

  • Pam® Original, Canola oil spray
  • 2 potatoes, cooked and peeled
  • 6 surimi, finely chopped
  • 3 teaspoons onion, chopped
  • 2 teaspoons garlic, finely chopped
  • 3 teaspoons low-fat mayonnaise
  • 3 teaspoons parsley, finely chopped
  • 1 teaspoon paprika, milled
  • 2 cups bread, milled
  • 3 eggs
  • 1/2 cups flour
  • salt
  • pepper

  • Crush the potatoes in a bowl and add the surimi, onion, garlic, paprika, parsley, mayonnaise, and ½ cup of bread crumbs.
  • Incorporate an egg into the mixture and form spherical croquettes. Reserve them.
  • Beat two eggs and pass the balls through the flour, then through the beaten egg, and finally through the ground bread.
