Crab Croquettes

  • Pam® Original, canola oil spray
  • 2 potatoes, cooked and peeled
  • 6 surimi, finely chopped
  • 3 teaspoons onion, chopped
  • 2 teaspoons garlic, finely chopped
  • 3 teaspoons low-fat mayonnaise
  • 3 teaspoons parsley, finely chopped
  • 1 teaspoon paprika, ground
  • 2 cups bread, ground
  • 3 eggs
  • 1/2 cups flour
  • salt
  • pepper

  • Mash the potatoes in a bowl and add the surimi, onion, garlic, paprika, parsley, mayonnaise, and ½ cup of breadcrumbs.
  • Add one egg to the mixture and form spherical croquettes. Set them aside.
  • Beat two eggs and roll the balls in flour, then in the beaten egg, and finally in the breadcrumbs.
