Creamy Salmon Pasta

This is a delicious creamy salmon pasta recipe full of flavor with ingredients like sun-dried tomatoes, spinach, and white wine, which makes it very creamy. Additionally, the combination with DE LUIGI® Fettuccine pasta provides the ideal touch for that Christmas dinner you want to share with your loved ones.

  • 1 package Luigi® Fettuccine, 500 g
  • 500 grams salmon fillet, skinless, two slices of 250 g

  • 2 tablespoons olive oil
  • 3 tablespoons butter, in cubes
  • 2 tablespoons garlic, finely chopped
  • 1/2 cups onion, finely chopped
  • 2 cups whipping cream
  • 1/3 cups white wine
  • 1/4 cups sun-dried tomatoes, cut into strips
  • 1 tablespoon Tres Estrellas® rice flour
  • 3 cups spinach, only the leaves
  • 1/2 cups Parmesan cheese, grated
  • 1 tablespoon basil, only the leaves, for garnish

  • Boil enough water in a deep pot, and once it is bubbling vigorously, add salt, then wait for it to boil again and then add the DE LUIGI® Fettuccine, stirring with a plastic or wooden spoon and cook for approximately 12 minutes, according to the package instructions. Drain and set aside.
  • Pour the olive oil into a large skillet, cook the salmon slices on both sides over low heat for 10 minutes, seasoning with salt and pepper. You can cover the skillet to speed up cooking. Once the salmon is cooked, remove from the skillet and set aside.
  • In the same skillet, melt the butter and cook the onion and garlic for 3 minutes over medium heat until lightly browned. Add the heavy cream and white wine, mix and cook for 6 minutes. Incorporate the sun-dried tomatoes, Tres Estrellas® rice flour, and stir to dissolve. Finally, add the baby spinach, parmesan cheese, and DE LUIGI® Fettuccine pasta. Mix gently and cook for 5 more minutes. Remove from heat.
  • Serve the creamy salmon pasta in a large baking dish, add the salmon fillets and garnish with basil leaves.
