The fish is very commonly consumed on the Mexican coasts, where the classic preparation is battered and fried. In this case, we add a delicious spicy sauce to this devil-style fish recipe.
Marinate the fish with garlic powder, salt, and pepper. Make sure to cover the entire fish to ensure it is well seasoned.
Prepare the flour with garlic salt, salt, and pepper, and coat the fish until fully covered.
Heat a deep skillet with enough vegetable oil over medium heat and fry the fish for approximately 10 minutes each. Remove from the oil and drain excess with paper towels.
For the sauce: Place the guajillo chiles, morita chiles, árbol chiles, and orange juice in a pot and heat for 5 minutes, until the chiles soften. Then blend the chiles with the juice, add water, onion, and garlic. The texture should be very smooth.
Heat a deep skillet over medium heat, add the butter, and fry the sauce for 5 minutes or until it changes color. At this point, add the fish and coat with the sauce. Remove the fish.
Serve the fish with slices of orange, lime, yellow lemon, and cilantro leaves. You can accompany it with rice and salad.
