Devil-Style Fish

The fish is very commonly consumed on the Mexican coasts, where the classic preparation is battered and fried. In this case, we add a delicious spicy sauce to this devil-style fish recipe.

  • 2 mojarra fish

  • 3 guajillo chiles, for the sauce
  • 2 morita chiles, for the sauce
  • 3 árbol chiles, for the sauce
  • 1 cup orange juice, for the sauce
  • 1/2 cups water, for the sauce
  • 1 clove garlic, for the sauce
  • 1/4 onions, for the sauce

  • 1 tablespoon butter

  • lime, sliced
  • cilantro, leaves, for garnish

  • Marinate the fish with garlic powder, salt, and pepper. Make sure to cover the entire fish to ensure it is well seasoned.
  • Prepare the flour with garlic salt, salt, and pepper, and coat the fish until fully covered.
  • Heat a deep skillet with enough vegetable oil over medium heat and fry the fish for approximately 10 minutes each. Remove from the oil and drain excess with paper towels.
  • For the sauce: Place the guajillo chiles, morita chiles, árbol chiles, and orange juice in a pot and heat for 5 minutes, until the chiles soften. Then blend the chiles with the juice, add water, onion, and garlic. The texture should be very smooth.
  • Heat a deep skillet over medium heat, add the butter, and fry the sauce for 5 minutes or until it changes color. At this point, add the fish and coat with the sauce. Remove the fish.
  • Serve the fish with slices of orange, lime, yellow lemon, and cilantro leaves. You can accompany it with rice and salad.
