Mix 3 tablespoons of coconut milk with 3 tablespoons of lime juice and marinate the dorado fillets for about 15 minutes covered.
Mix the other tablespoon of coconut milk with the other 3 of lime juice, mango, cucumber, onion, cilantro, ginger, and serrano chili. Add salt and mix well.
Remove the fish from the marinade and add salt and pepper. Heat a skillet and spray with cooking spray (PAM). Cook the fish for 4 minutes on each side, or until fully cooked.
Serve with the mango sauce on top and garnish with cilantro and lime slices.
