Dorado with Mango Sauce

White fish with mango sauce with chili, cucumber, cilantro, and red onion.

  • 1/4 cups coconut milk, light
  • 6 tablespoons lime juice
  • 4 saw fish, or another white fish
  • 1 1/2 cups mango, cut into small cubes
  • 3/4 cups cucumber, cut into small cubes
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon fresh cilantro, finely diced
  • 1 teaspoon ginger, grated
  • 1 serrano chile, finely sliced
  • 3/4 teaspoons salt
  • 1/4 teaspoons pepper

  • Mix 3 tablespoons of coconut milk with 3 tablespoons of lime juice and marinate the dorado fillets for about 15 minutes covered.
  • Mix the other tablespoon of coconut milk with the other 3 of lime juice, mango, cucumber, onion, cilantro, ginger, and serrano chili. Add salt and mix well.
  • Remove the fish from the marinade and add salt and pepper. Heat a skillet and spray with cooking spray (PAM). Cook the fish for 4 minutes on each side, or until fully cooked.
  • Serve with the mango sauce on top and garnish with cilantro and lime slices.
