Dry Noodles with Shrimp

If you are a fan of pasta and especially dry noodles, we present this recipe for Dry Noodles with Shrimp, an ideal dish you can prepare during Lent. This easy recipe is made with chorizo and to season the shrimp, you can use butter and a touch of hot sauce. Remember that when preparing dry noodles, you should not stir them too much; otherwise, they will become mushy.

  • 1/4 onions, for the sauce
  • 3 tomatoes, for the sauce
  • 1 clove garlic, for the sauce
  • 2 guajillo chiles, for the broth
  • water, hot, to hydrate the chiles, for the sauce
  • 2 allspice berries, for the sauce
  • 2 cups chicken broth, for the sauce
  • salt
  • 1/2 cups chorizo
  • 1 cup fideo pasta
  • 1 tablespoon butter
  • 300 grams shrimp
  • 1 tablespoon garlic, finely chopped
  • 3 tablespoons Salsa Huichol® hot sauce
  • 1 tablespoon pepper
  • 3 tablespoons parsley
  • sour cream, for garnish
  • cheese, fresh, for garnish
  • avocado, for garnish

  • In a comal over medium heat, roast the onion, tomato, garlic, and guajillo pepper. Soak the chiles in hot water until softened. Remove the roasted vegetables.
  • Blend the roasted vegetables along with the chiles, allspice, chicken broth, and season with salt.
  • In a medium saucepan, fry the chorizo until it releases its fat, then remove. In the same pan, fry the noodles until golden, stirring constantly to prevent sticking, pour in the sauce and cook until the liquid has completely reduced. Add the chorizo and set aside.
  • For the shrimp, in a skillet with butter, cook the shrimp with garlic, Huichol Hot Sauce®, pepper, and parsley until cooked. Adjust seasoning and set aside.
  • Serve the noodles, place the shrimp on top, and garnish with cream, fresh cheese, and avocado.
