Easy Gobernador Tacos

These tacos are typical of the state of Sinaloa, created in a restaurant to please the taste of the current governor, hence the name. The main ingredients of gobernador tacos are shrimp, poblano pepper, and cheese. You'll love them!

  • vegetable oil
  • 1 onion, medium, 200 g
  • 1 clove garlic, finely chopped
  • 1 1/2 cups Poblano chile strips
  • 1 sprig celery, finely chopped
  • 3 cups shrimp, peeled, cleaned, and deveined (1/2 kilo)
  • salt
  • pepper
  • 10 corn tortillas
  • 2 cups Manchego cheese, grated
  • green salsa, for serving

  • Heat a skillet over medium heat, pour in a little oil, and sauté the onion, garlic, and celery for 3 minutes; add the strips of poblano pepper and cook for 5 more minutes.
  • Add the shrimp and season with salt and pepper; cook for 5 minutes until the shrimp change color. Remove from heat.
  • Heat the tortillas in a skillet or griddle over low heat, add the cheese and melt for 2 minutes. Add the shrimp mixture, close the tacos, and remove from heat.
  • Serve the tacos warm with your preferred sauce.
