Easy Mexican Shrimp Ceviche

This Mexican shrimp ceviche with Carbonell® Extra Virgin Olive Oil will come to your rescue this Lent, as it is ready in 2 simple steps. It is perfect for sharing with family and taking care of your figure, in addition to being healthy and delicious.

  • 1/4 red onions
  • 2 serrano chiles
  • 1/4 bunches cilantro
  • 2 tomatoes
  • 1 avocado
  • 500 grams pink shrimp, medium or large
  • 1 cup lime juice
  • salt
  • pepper
  • 1/4 cups Carbonell® extra virgin olive oil
  • tostadas, or tortilla chips, for serving

  • On a cutting board, finely chop the red onion, serrano chili, cilantro, and dice the tomato and avocado.
  • Mix the shrimp in a bowl with lemon juice, tomato, red onion, serrano chili, cilantro, avocado, salt, pepper, and Carbonell® Extra Virgin Olive Oil until well combined. Marinate in the refrigerator for 30 minutes.
  • Serve and accompany with tostadas.
