Easy Shrimp Tacos with Cheese

  • 2 tablespoons vegetable oil
  • 4 tablespoons onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 1/2 yellow bell peppers, in strips
  • 1/2 orange bell peppers, in strips
  • 2 cups pink shrimp
  • 1 cup Oaxaca cheese, shredded
  • 3 tomatoes, diced
  • 1/4 onions, finely chopped
  • 4 serrano chiles, finely chopped
  • 4 tablespoons lime juice
  • 1/2 cups black beans, without broth
  • fresh cilantro, finely chopped
  • salt and pepper

  • In a skillet over medium heat, heat the oil, add the onion, garlic, bell peppers, add the shrimp, season with salt and pepper, and cook for 5 minutes.
  • Add the Oaxaca cheese and cook until the cheese is melted.
  • For the pico de gallo: in a bowl mix the tomato, onion, serrano chili, pour in the lime juice, add the beans, include the cilantro, and season with salt and pepper.
  • Heat the flour tortillas in a skillet and place some shrimp with cheese, serve with the bean pico de gallo.
