Ingredients

4 servings
  • 2 spoonfuls of vegetable oil
  • 4 spoonfuls of onion finely chopped
  • 2 spoonfuls of garlic finely chopped
  • 1/2 piece of yellow bell pepper in strips
  • 1/2 piece of Bell pepper orange, in strips
  • 2 cups of cheap shrimp
  • 1 Cup of Oaxaca cheese shredding
  • 3 pieces of tomato diced
  • 1/4 of piece of onion finely chopped
  • 4 pieces of serrano pepper finely chopped
  • 4 spoonfuls of lemon juice
  • 1/2 Cup of whole black bean without broth
  • to taste of coriander finely chopped
  • to taste of salt and pepper
  • 8 pieces of flour tortillas

    Preparation

    In a pan over medium heat heat the oil, add the onion, garlic, peppers, add the shrimp, season with salt and pepper, cook for 5 minutes.
    Add the oaxaca cheese and cook until the cheese is gratin.
    For the pico de gallo: in a bowl mix the tomato, the onion, the chile serrano, pour the lemon juice, add the beans, add the cilantro and season with salt and pepper.
    Heat the flour tortillas on a pan and place a little shrimp with cheese, accompanied with the pico de gallo de bean.

    PRESENTATION

    On an extended plate accompanied by a refreshing drink.

    TIPS

    You can change the Oaxaca cheese for manchego or any other cheese that gratine.
