Ingredients

4 portions
  • 2 tablespoons vegetal oil
  • 4 tablespoons onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 1/2 yellow bell peppers, in strips
  • 1/2 bell peppers, orange, in strips
  • 2 cups cheap shrimp
  • 1 cup Oaxaca cheese, shredding
  • 3 tomatoes, diced
  • 1/4 onions, finely chopped
  • 4 serrano peppers, finely chopped
  • 4 tablespoons lemon juice
  • 1/2 cups whole black bean, without broth
  • to taste fresh coriander, finely chopped
  • to taste salt and pepper
  • 8 flour tortillas

Preparation

In a pan over medium heat heat the oil, add the onion, garlic, peppers, add the shrimp, season with salt and pepper, cook for 5 minutes.
Add the oaxaca cheese and cook until the cheese is gratin.
For the pico de gallo: in a bowl mix the tomato, the onion, the chile serrano, pour the lemon juice, add the beans, add the cilantro and season with salt and pepper.
Heat the flour tortillas on a pan and place a little shrimp with cheese, accompanied with the pico de gallo de bean.

PRESENTATION

On an extended plate accompanied by a refreshing drink.

TIPS

You can change the Oaxaca cheese for manchego or any other cheese that gratine.
