Esquites with Shrimp and Guajillo Chile

One of the typical Mexican snacks you find on almost every corner is undoubtedly esquites. But to give them a different flavor, we prepare this recipe for Esquites with Shrimp and Guajillo Chile, which you can also serve with mayonnaise, fresh cheese, lime, and chili piquín. For this easy esquites recipe, you should keep in mind that if you overcook the shrimp, they will become rubbery, so pay close attention.

  • In a saucepan, heat the olive oil and fry the onion, garlic, chiles, and tomatoes until softened. Add the pepper, corn, water, and shrimp powder, cook for 10 more minutes, then remove and cool slightly.
  • Remove the corn and blend the previous preparation with salt and strain if necessary.
  • In a deep skillet, melt the butter over medium heat and cook the onion, garlic, corn, epazote, season with salt, and add the shrimp. Once the shrimp have changed color, fill with the sauce, let it come to a boil, and cook until the corn is tender.
  • Serve with mayonnaise, fresh cheese, chili powder, epazote, and lime.
