Prepare this delicious salmon filled with a tasty mix of nuts and Mediterranean-style feta cheese. It is very juicy and has an intense flavor, baked, and can be accompanied by a nice salad.
Cut each salmon fillet in half without cutting all the way through. Brush each fillet with Nutrioli DHA® Oil and season with salt and pepper. Set aside.
For the filling, in a medium skillet, heat Nutrioli DHA® Oil and cook the shallot until translucent. Add the spinach, cook for 5 minutes or until all the liquid evaporates.
Add the cheese and nuts and cook for 3 minutes, seasoning with salt and pepper.
Stuff each fillet with the spinach mixture and wrap in aluminum foil. Place them on a baking tray and bake for about 25 minutes or until cooked through.
Serve immediately.
