Feta Cheese and Nut Stuffed Salmon

Prepare this delicious salmon filled with a tasty mix of nuts and Mediterranean-style feta cheese. It is very juicy and has an intense flavor, baked, and can be accompanied by a nice salad.

  • 4 salmon fillet, thick
  • 4 teaspoons Nutrioli Dha® soy oil
  • 4 pinches salt
  • 4 pinches pepper
  • 2 tablespoons Nutrioli Dha® soy oil
  • 2 shallots, finely chopped
  • 3 cups spinach, chopped
  • 1 cup feta cheese, in cubes
  • 4 tablespoons almonds, filleted
  • 4 tablespoons walnuts, minced
  • 4 tablespoons peanuts
  • 4 tablespoons cranberries, dehydrated
  • 1/2 teaspoons salt
  • 1/2 teaspoons pepper

  • Preheat the oven to 180°C.
  • Cut each salmon fillet in half without cutting all the way through. Brush each fillet with Nutrioli DHA® Oil and season with salt and pepper. Set aside.
  • For the filling, in a medium skillet, heat Nutrioli DHA® Oil and cook the shallot until translucent. Add the spinach, cook for 5 minutes or until all the liquid evaporates.
  • Add the cheese and nuts and cook for 3 minutes, seasoning with salt and pepper.
  • Stuff each fillet with the spinach mixture and wrap in aluminum foil. Place them on a baking tray and bake for about 25 minutes or until cooked through.
  • Serve immediately.
