Orange Ceviche

  • 2 Vita+® orange cups, 5.9 oz each
  • 1/4 cups lime juice
  • 1/2 cups red onion, cut into cubes
  • 1/4 cups tomato, cut into cubes
  • 1/4 cucumbers, Persian, cut into half-moons
  • 1/4 jicamas, cut into cubes
  • 3 tablespoons chives, finely chopped
  • 2 tablespoons serrano chile, finely chopped
  • 2 cups white fish, cut into cubes
  • 1/4 cups cilantro, finely chopped
  • 1/4 cups spearmint, finely chopped

  • tortillas, cut into thin strips, for garnish

  • Drain juice from the Vita+® orange cups. Set the orange wedges aside. Mix juice with lime juice.
  • In a large bowl, mix red onion, tomato, Persian cucumber, jicama, chives, serrano chile, white fish, previous juice mixture, cilantro, mint, and Vita + ® orange wedges. Season with salt and pepper. Mix thoroughly. Marinate orange ceviche in the fridge for 30 minutes.
  • Serve orange ceviche garnished with baked tortilla strips.
