Fish and Orange Ceviche

Ceviche is a dish full of freshness, flavor, and balance. The main secret of this beloved dish is that the fish is very fresh so it can be mixed with a citrus marinade; a simple way to prepare it is with Vita+® orange Cups. Enjoy them with their natural fruit flavor!

  • 2 Vita+® orange cups, 170 g each
  • 1/4 cups lime juice
  • 1/2 cups red onion, in cubes
  • 1/4 cups tomato, in cubes
  • 1/4 cucumbers, Persian, in half moons
  • 1/4 jicamas, in cubes
  • 3 tablespoons chives, finely chopped
  • 2 tablespoons serrano chile, finely chopped
  • 2 cups white fish, in cubes
  • 1/4 cups cilantro, finely chopped
  • 1/4 cups spearmint, finely chopped

  • tortillas, chopped, in strips, for decoration

  • Separate the juice from the Vita+® orange Cups. Reserve the segments and mix the juice from the cups with the lemon juice.
  • In a large bowl, mix the red onion with the tomato, Persian cucumber, jicama, green onion, serrano chili, white fish, juice mixture, cilantro, mint, and Vita+® orange segments. Season with salt and pepper, mix thoroughly, and marinate in the refrigerator for 30 minutes.
  • Serve, decorate with the baked tortillas.
