Fish Bars with Amaranth

  • 2 eggs
  • 1 teaspoon mustard
  • salt and pepper
  • 4 tilapia fillets, cut into strips, medium thickness
  • 1 cup amaranth
  • cooking spray
  • 1 cup Greek yogurt, for the dressing
  • 1 teaspoon lime juice, for the dressing
  • 1 teaspoon Dijon mustard, for the dressing
  • 1 teaspoon fresh parsley, for the dressing
  • 1 teaspoon chives, finely chopped, for the dressing

  • Preheat the oven to 180°C.
  • Beat the egg with the mustard, season with salt and pepper.
  • Dip the fish in the egg, then coat with the amaranth.
  • Place the fish on a baking sheet and spray with cooking spray, bake for 15 minutes.
  • For the dressing, mix the yogurt with the lemon juice, mustard, parsley, and chives, season with salt and pepper.
  • Serve the fish bars with the dressing and a green salad.
