4 tilapia fillets, cut into strips, moderately thick
1 cup amaranth
cooking spray
1 cup Greek yogurt, for the dressing
1 teaspoon lime juice, for the dressing
1 teaspoon Dijon mustard, for the dressing
1 teaspoon fresh parsley, for the dressing
1 teaspoon chives, finely chopped, for dressing

Preheat the oven to 180 ° C.
Beat the egg with the mustard, season with salt and pepper.
Dip the fish in the egg, cover with the amaranth.
Place the fish in a tray and spray with cooking spray, bake for 15 minutes
For the dressing, mix yoghurt with lemon juice, mustard, parsley and green onions, season with salt and pepper.
Serve the fish sticks accompanied by dressing and green salad.
