Fish Bars with Amaranth

Ingredients

4 portions
  • 2 eggs
  • 1 teaspoon mustard

  • 4 tilapia fillets, cut into strips, moderately thick
  • 1 cup amaranth
  • enough cooking spray oil
  • 1 cup greek yogurt, for the dressing
  • 1 teaspoon lemon juice, for the dressing
  • 1 teaspoon Dijon mustard, for the dressing
  • 1 teaspoon fresh parsley, for the dressing
  • 1 teaspoon chives, finely chopped, for dressing

Preparation

Preheat the oven to 180 ° C.
Beat the egg with the mustard, season with salt and pepper.
Dip the fish in the egg, cover with the amaranth.
Place the fish in a tray and spray with cooking spray, bake for 15 minutes
For the dressing, mix yoghurt with lemon juice, mustard, parsley and green onions, season with salt and pepper.
