Fish Fillet with Mango, Cucumber, and Basil

  • 1 white fish fillet, of the Nile
  • 1/2 cucumbers, cut into medium cubes
  • 1 mango, cut into medium cubes
  • 6 leaves basil, freshly chopped finely
  • 2 tablespoons extra virgin olive oil

  • In a medium deep bowl, mix the mango cubes, cucumber, chopped basil, lemon juice, and olive oil. Season the mixture with salt and pepper.
  • Preheat a skillet over medium-high heat.
  • Season the fish on both sides with salt and pepper.
  • Once the skillet is heated, add the vegetable oil and immediately place the fillets in. Wait approximately 4 to 6 minutes for one side to cook well, then flip them only once.
  • Once they are nicely browned, remove from heat and serve with the mango, cucumber, and basil garnish.
