Fish Fillet with Mango, Cucumber and Basil

  • 1/2 cucumbers, cut into medium cubes
  • 1 mango, cut into medium cubes
  • 6 leaves basil, freshly finely chopped
  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon vegetable oil
  • lime juice, one piece

  • In a medium deep bowl, mix the cubes of mango, cucumber, chopped basil, lemon juice and olive oil. Season the mixture with salt and pepper.
  • Preheat a skillet over medium-high heat.
  • Season the fish on both sides with salt and pepper.
  • Once the skillet has heated up, add the vegetable oil and immediately the fillets. Wait about 4 to 6 minutes for them to cook well on one side and then turn them only once.
  • Once they have browned well, remove from heat and serve with the mango, cucumber and basil garnish.
