Fish in Hoja Santa with Chilpotle

Give your weekly menu a twist with this delicious fish recipe with hoja santa and a rich chilpotle sauce made with Del Fuerte® Ground Tomatoes with Chilpotle, which will give a special touch to the dish.

  • 2 boxes Del Fuerte® ground tomatoes with chipotle chiles, 210 g, for the sauce

  • 4 hojas santas
  • 2 fish, in slices
  • 2 tablespoons olive oil

  • 1 1/2 cups red onion, cut into strips, for the pickling
  • 1/2 cups apple cider vinegar, for the pickling
  • 1/2 cups orange juice, for the pickling

  • For the sauce: Blend the onion, garlic, Del Fuerte® Ground Tomatoes with Chilpotle, pepper, cumin, and orange juice for 5 minutes.
  • Cook the sauce in a skillet over low heat for 5 minutes, season with salt, and set aside.
  • On a cutting board, place a hoja santa leaf and on top the slice of fish. Season with salt, pepper, and oregano. Then cover with another hoja santa and set aside.
  • In a skillet, pour the olive oil and fry the fish wrapped in hoja santa for 10 minutes, remembering to cover it. Set aside.
  • Mix the red onion, apple cider vinegar, orange juice, olive oil, salt, and oregano in a bowl.
  • Serve the fish on a flat plate and drizzle with the sauce. Decorate with pickled onions.
