Fish in Pine Nut Persillade and Parmesan Cheese

  • 400 grams fish fillet
  • 1 bunch parsley
  • 20 grams pine nuts, peeled
  • 25 grams Parmesan cheese
  • 1 1/2 cups breadcrumbs
  • 1 tablespoon garlic powder

  • Preheat the oven to 180 °C. Wash and chop the parsley.
  • For the persillade: In a bowl, grate the Parmesan cheese, then add the parsley and breadcrumbs. Season the fish on both sides, placing it on a greased baking tray, bake for 8-12 minutes, remove from the oven and coat with the persillade, return to the oven for an additional 4-5 minutes.
