This take on mixiotes has a flavorful sauce thanks to San Marcos® chiles and spices. This fish mixiote is healthy, easy-to-prepare, and full of flavor.
Using kitchen shears, trim and seed San Marcos® chipotle chiles, San Marcos® pasilla chiles, San Marcos® ancho chiles, San Marcos® guajillo chiles, and San Marcos® árbol chiles.
In a skillet over medium heat, add a dash of oil and fry trimmed chiles, tomatillos, onion, and garlic for 5 minutes. Add orange juice and cook for 5 more minutes.
Transfer San Marcos® chipotle chiles, San Marcos® pasilla chiles, San Marcos® ancho chiles, San Marcos® guajillo chiles, and San Marcos® árbol chiles to a blender. Add oregano, cumin, bay leaf, and allspice berries. Season with salt and blend until smooth.
For assembling the mixiote: Stach a banana leaf on top of parchment paper squares. Place an avocado leaf and 2 fish fillets on top. Season with salt and pepper and spoon adobo sauce over. Wrap mixiote.
Cook in a steamer for 20 minutes.
Serve fish mixiote with tortillas.
