Fish Mixiote

This version of mixiote has all the flavor of the sauce with San Marcos® chiles and spices. This mixiote is healthy, easy to prepare, and full of flavor.

  • 4 tilapia fillets
  • 3 pieces San Marcos® chipotle chiles
  • 4 pieces San Marcos® pasilla chiles
  • 3 pieces San Marcos® ancho chile
  • 4 pieces San Marcos® guajillo chiles
  • 3 pieces San Marcos® árbol chiles
  • vegetable oil
  • 5 tomatillos
  • 1/4 onions
  • 1 garlic
  • 1 teaspoon cumin
  • 2 leaves bay
  • 1 tablespoon oregano
  • 3 allspice berries
  • 3 cups orange juice
  • banana leaf, grilled
  • avocado leaves
  • nopal, in strips
  • salt
  • pepper
  • tortillas, to accompany

  • With the help of scissors, clean the stems, seeds, and veins of the San Marcos® chipotle chiles, San Marcos® pasilla chiles, San Marcos® ancho chiles, San Marcos® guajillo chiles, and San Marcos® árbol chiles.
  • Heat a skillet over medium heat, add a little oil and then fry for 5 minutes the cleaned chiles, tomatillos, onion, and garlic; add the orange juice and cook for 5 more minutes, for a total cooking time of 10 minutes.
  • Blend the chiles (San Marcos® chipotle chiles, San Marcos® pasilla chiles, San Marcos® ancho chiles, San Marcos® guajillo chiles, San Marcos® árbol chiles) with oregano, cumin, bay leaf, and allspice, season with salt.
  • To assemble the mixiote, place the banana leaf over a square cut piece of wax paper; add an avocado leaf, 2 fish fillets, season with salt and pepper, and add the adobo you made, the nopales, and close.
  • Cook in a steamer for 20 minutes.
  • Serve and accompany with tortillas.
