Fish Mixiote

This take on mixiotes has a flavorful sauce thanks to San Marcos® chiles and spices. This fish mixiote is healthy, easy-to-prepare, and full of flavor.

  • 4 tilapia fillets
  • 3 pieces San Marcos® chipotle chiles
  • 4 pieces San Marcos® pasilla chiles
  • 3 pieces San Marcos® ancho chile
  • 4 pieces San Marcos® guajillo chiles
  • 3 pieces San Marcos® árbol chiles
  • vegetable oil
  • 5 tomatillos
  • 1/4 onions
  • 1 garlic
  • 1 teaspoon cumin
  • 2 leaves bay
  • 1 tablespoon oregano
  • 3 allspice berries
  • 3 cups orange juice
  • banana leaf, roasted
  • avocado leaves
  • nopal, cut into thin strips
  • salt
  • pepper
  • tortillas, for serving

  • Using kitchen shears, trim and seed San Marcos® chipotle chiles, San Marcos® pasilla chiles, San Marcos® ancho chiles, San Marcos® guajillo chiles, and San Marcos® árbol chiles.
  • In a skillet over medium heat, add a dash of oil and fry trimmed chiles, tomatillos, onion, and garlic for 5 minutes. Add orange juice and cook for 5 more minutes.
  • Transfer San Marcos® chipotle chiles, San Marcos® pasilla chiles, San Marcos® ancho chiles, San Marcos® guajillo chiles, and San Marcos® árbol chiles to a blender. Add oregano, cumin, bay leaf, and allspice berries. Season with salt and blend until smooth.
  • For assembling the mixiote: Stach a banana leaf on top of parchment paper squares. Place an avocado leaf and 2 fish fillets on top. Season with salt and pepper and spoon adobo sauce over. Wrap mixiote.
  • Cook in a steamer for 20 minutes.
  • Serve fish mixiote with tortillas.
